Muffins with vegetables and three kinds of bread from the Premium German Bread Basket

Ingredients for 6 muffins:
- any 3 packets of bread from the Mestemacher Premium German Bread Basket, diced
- 125 ml vegetable drink
- 1/2 tsp. salt
- 1/4 tsp. harissa
- 1/4 tsp. pepper
- 1 shallot, finely diced
- 60 g pickled courgette, diced
- 60 g pickled peppers, diced
- 1 tbsp. olive oil
- 4 stalks parsley, chopped
- 50 g vegan processed cheese
In addition:
- 6 er muffin tray, lined with 6 paper cases
Preparation:
- Mix the bread cubes with the vegetable milk and soak for 10 minutes.
- Mix all the other ingredients into the bread mixture, divide between the muffin cases and bake in the oven at 200 °C top/bottom heat for 20 minutes until golden brown. For the cold treat, remove the muffins from the tray and leave to cool completely in the paper cases.
