Fruit salad with curd on Gourmet Pumpernickel
Ingredients
- 1 pack of Mestemacher Gourmet Pumpernickel
- ½ mango
- 2 kiwis
- 1 handful of blueberries
- 2 peaches
- ½ bunch of mint
- 1 pinch of ginger, grated
- a few squirts of lemon juice
- curd
- some milk
Preparation
- Finely dice the fruit. Chop the mint finely (place aside some leaves for garnishing). Mix the fruit, lemon juice, ginger, and mint.
- Whip the curd with a little milk until creamy.
- Spread the curd onto the slices of bread, add the fruit and garnish with a little mint.
