Fruit salad with curd on Gourmet Pumpernickel

Ingredients

  • 1 pack of Mestemacher Gourmet Pumpernickel
  • ½ mango
  • 2 kiwis
  • 1 handful of blueberries
  • 2 peaches
  • ½ bunch of mint
  • 1 pinch of ginger, grated
  • a few squirts of lemon juice
  • curd
  • some milk

Preparation

  1. Finely dice the fruit. Chop the mint finely (place aside some leaves for garnishing). Mix the fruit, lemon juice, ginger, and mint.
  2. Whip the curd with a little milk until creamy.
  3. Spread the curd onto the slices of bread, add the fruit and garnish with a little mint.
