Falafel Wraps
Ingredients
- 1 Pack of Mestemacher California wraps wheat
- ½ lettuce head
- 1 handful of cocktail tomatoes
For the falafel
- 1 tin of chickpeas
- 1 small onion
- ½ bunch of parsley
- 1 clove of garlic
- 1 egg
- 1 pinch of cilantro
- Salt and chilli according to taste
- 1 cup of breadcrumbs
Preparation
- Chop the onion and garlic finely. Drain the liquid off the chickpeas and chop the parsley finely. Add all ingredients into a large bowl.
- Add the egg and seasoning and mix all ingredients together well. Then season to taste once again.
- Moisten your hands to form small falafel balls and then roll them in the breadcrumbs.
- Heat some oil in a pan and fry the balls until they are golden brown on all sides.
- Halve the tomatoes and slice the lettuce into bite-sized pieces.
- Spread some hummus in the centre of the wraps and top with lettuce, tomatoes and 3 falafel each. Fold the wraps, then wrap them in paper and serve.
