Vegetarian wraps with ricotta cheese and courgettes
for 4 wraps
- 4 Mestemacher Wraps
- 150g courgettes
- 12-14 cocktail tomatoes
- 200g ricotta cheese
- 2 stalks fresh thyme
- 40g pine nuts
- 2 tablespoons of olive oil
- salt
- pepper
- Roast the pine nuts in a pan without fat.
- Wash the thyme, dry it, and chop it finely.
- Wash the courgettes, first cut them in slices and then into fine strips, fry them in olive oil and allow them to cool down slightly.
- Wash the cocktail tomatoes, quarter them, remove the seeds and add the courgettes to them, then add salt and pepper.
- Prepare the 4 wraps according to the package instructions, stir the ricotta cheese until creamy and then spread onto the wraps.
- Spread the vegetables onto them, then sprinkle with chopped thyme and pine nuts.
- Roll up and serve.
