Toasted roll with pea-mint spread and grilled bell pepper
Ingredients for 4 toasted rolls:
- 4 Mestemacher toasted rolls
- 200g peas (deep-frozen)
- 1 red and 1 yellow bell pepper
- 4 tablespoons of olive oil
- salt, pepper
- 20g pine nuts
- 1 clove of garlic
- juice of ½ a lemon
- 2 stalks of mint
- Allow the peas to thaw.
- Wash the bell peppers, quarter them and remove the seeds. Grill on a grill or in a grill pan from both sides for 4 minutes.
- Place the bell pepper pieces on a plate, drizzle with olive oil and season with salt and pepper.
- Fry the pine nuts without fat in a pan.
- Peel the garlic, chop it and place it in a tall container with the remaining ingredients. Blend with an immersion blender. Season with salt and pepper.
- Toast the toasted roll and spread it with the pea-mint spread. Cut the bell peppers into strips and place on the base.
