Toasted roll with carrot-walnut soft goat’s cheese
Ingredients for 4 toasted rolls:
- 4 Mestemacher toasted rolls
- 300g carrots
- 1 clove of garlic
- 1 small onion
- 1 tablespoon of olive oil
- 100 ml water
- 2 tablespoons of honey
- salt, pepper
- 30g walnuts
- 150g soft goat’s cheese
- Peel the carrots, halve them and cut them into small pieces.
- Peel the garlic and onion and chop finely.
- Heat the oil in a pot and sauté the garlic, onion and carrots in it. Deglaze with water. Add honey, salt and pepper and simmer for 15 minutes.
- Roast the walnuts in a pan without fat. Set aside on a wooden plank to cool down and chop coarsely.
- Blend the carrots well with an immersion blender and set aside to cool down. Then stir in the goat’s milk cheese.
- Finally, add the walnuts, and season with salt and pepper.
- Toast the toasted rolls and spread with cream cheese. Serve with chives or parsley according to taste.
