Smørrebrød with chicken breast, tomatoes and herb mayonnaise
Ingredients
- 2 slices of organic wholemeal Mestemacher bread
- 2 fillet of chicken breast
- 100 grams of mayonnaise
- ½ bunch of parsley
- ½ bunch of chives
- ½ cucumber
- 4 tomatoes
- 1 small onion
- 1 tbsp. of white Balsamic vinegar
- Salt and pepper according to taste
Preparation
- Chop the herbs finely and stir them into the mayonnaise. Season the chicken breast fillets with salt and pepper and fry in the pan.
- Dice the onion and the tomatoes and stir with the Balsamic vinegar. Cut the cucumber into fine strips.
- Spread mayonnaise on the slices of organic wholemeal bread. Cut the chicken breast into pieces and alternate layering the bread with the chicken and cucumber .
- Place the tomato salad on top and garnish with herbs.
