Sandwich with Mozzarella and Roasted Vegetables
For 1 portion:
- 1 Mestemacher Toast Bread Rolls
- 1 teaspoon of pesto
- 2 slices of mozzarella cheese
- 3 slices of zucchini
- 3 slices of eggplant
- ¼ red onion
- ¼ red bell pepper
- 5 snap peas
- 1 teaspoon of margarine
- Salt and pepper
- Cut the vegetables into slices or pieces and briefly fry these in margarine.
Add salt and pepper. - Spread pesto on the lower half of the Toast Bread Roll, place the mozzarella slices on and then spread on the fried vegetables.
- Cover with the top half of the Toast Bread Roll.
