Protein bread with walnuts with fried leek
For 2 portions:
- 2 thin stalks of leek
- 2 tablespoons of olive oil
- 4 slices of Mestemacher protein bread with walnuts
- 4 tomatoes marinated in oil
- 30g of Parmesan shavings
- mixed pepper
- basil for garnishing
- Clean the leek, wash it, halve it down the length and cut it into about 5 cm long pieces. Fasten the pieces crossways with little wooden picks. Fry the leeks in olive oil for about 3 minutes, from both sides. Season with pepper. Set it aside to cool down a little bit, remove the wooden picks.
- Let the tomatoes drip off slightly and cut them into broad strips. Put onto the bread slices, together with the leek and Parmesan. Garnish with basil leaves.
Tip: instead of leek, you can also fry courgette pieces.
