Protein bread with carrots, with smoked turkey breast and mango
For 2 portions:
- ½ ripe mango
- 1-2 teaspoons of lemon juice
- 200g cucumber
- 60g peanut butter with crunch
- 4 slices of Mestemacher protein bread with carrots
- 8 wafer thin slices of smoked turkey breast
- 20g roasted, salted peanut kernels
- Some stalks of cilantro
- Peel the mango, cut it into fine wedges and drizzle with lemon juice. Rinse off the cucumber, dab it dry and cut it into slices.
- Spread peanut butter onto the bread slices, top with turkey breast, cucumbers slices and cucumber. Sprinkle with peanut kernels. Garnish with coriander.
Tip: Instead of fresh mango, you can also use pear wedges.
