Mediterranean Dips
Mousse from feta cheese with olives and lime juice
Ingredients:
- 250 g feta cheese
- 200 g garlic olives
- 1 fistful raisins
- 2 tablespoonful roast pine nuts
- juice of 1 lime
Preparation:
- Purée all ingredients in a mixer.
- Who likes may add a dash of Ouzo.
Avocado dip with fresh lime juice
Ingredients:
- 2 soft avocados
- 2 small fresh red chillies
- 2 spring onions
- 1 tablespoon olive oil
- 150 g sour cream
- coriander
Preparation:
- Peel avocados and press through a big colander.
- Dice chillies (very small pieces) and add to avocados.
- Wash 2 spring onions well, dice, too, and add to the mixture.
- Add 1 tablespoon olive oil, one knife point coriander and 150g sour cream, then stir.
- Finally season with the juice of one freshly squeezed lime. Serve immediately, as avocados turn dark quickly.
Variation: Dip may also be prepared in a mixer. However, be careful! Chillies may turn extremely hot this way!
Aioli
Ingredients:
- 5 big cloves of garlic
- 1 glass mayonnaise (250 g)
- curry and pepper to taste
Preparation:
- Crush gloves of garlic finely.
- Add garlic to mayonnaise, stir and taste with some curry and pepper.
