Fitness Bread with Avocado in Lemon Herb oil
Ingredients for 2 bread slices:
- 2 slices of Mestemacher Fitness Bread
- 1–2 twigs of mint
- 1–2 twigs of parsley
- 4 tablespoons of olive oil
- lemon zest of a ¼ lemon
- Salt, pepper
- 1 large tomato
- ½ half of an avocado
- Pluck the herbs from the stalks, chop coarsely and mix with the olive oil.
- Add the lemon zest and season to taste with salt and pepper.
- Quarter the tomato and remove the seeds. Dice the fruit meat and also add to the oil.
- Peel the avocado and cut into slices.
- Place the avocado slices on the bread slices and drizzle with herb oil.
