Burger with grilled pumpernickel, chicken and herb pesto
Ingredients for 4 burgers
For the pesto
- 1 handful of chopped parsley
- 1 handful of chopped chives
- 1 small onion, chopped
- 100 ml olive oil
- approx. 70 grams of grated parmesan cheese
For the burgers
- 8 slices of pumpernickel
- 4 thin fillets of chicken breast
- Salt, pepper, paprika
- 4 slices of cheddar cheese
- 1 head of romaine lettuce
- 2 tomatoes
- 2 gherkins
- 1 onion, cut into slices
- 1 tablespoon pesto per burger
Preparation
- Thoroughly stir all ingredients for the pesto. Add as much parmesan cheese to the pesto as is needed until you get the desired texture.
- Roast the pumpernickel slices in a grilling pan. Then season the fillets of chicken breast and also roast these in the pan. In the last minute, add the cheese slices to the meat so that the cheese melts. Also briefly place the onion in the pan.
- Slice the tomatoes and gherkins. Wash the lettuce and break off the leaves.
- Stack the burgers on the plate. Then take a slice of pumpernickel and first place the lettuce, then the chicken, the pesto, a slice of tomato, two slices of gherkin and the onion on top. In a final step, place the second slice of pumpernickel on top.
