Gravlax Wraps with herb-mustard remoulade
for 4 wraps
- 4 Mestemacher Wraps
- 8 slices of Gravlax
- 8 leaves of curled lettuce
- 4 radicchio lettuce leaves
- ½ honeydew melon (8 thin slices)
- 1 egg yolk
- 3 teaspoons of Dijon mustard
- 1 teaspoon of honey
- 100ml oil
- 1½ tablespoons of chopped herbs e.g. parsley, dill, tarragon
- Wash the lettuce leaves, dry them and cut them into strips.
- Mix the egg yolk, honey and mustard and add the oil drop-wise, under constant stirring.
- Add the herbs, season with salt and pepper.
- Prepare 4 wraps according to the package instructions, top with Gravlax, place the lettuce on top of it and sprinkle with the sauce.
- In each case, roll up with 2 thin slices of honeydew melon and serve.
