Fitness bread
serves 2
- 4 slices of Mestemacher Fitness Bread
- 100 g cream cheese with herbs
- 1 small courgette
- 1 red pepper
- 1 small aubergine
- 1/4 branch thyme
- 1/4 branch chopped rosemary
- 1 clove of garlic
- 1 bunch chives
- 2 tablespoons of olive oil
- Salt
- Black pepper
- Slice courgette, aubergine in slices and cut red pepper into segments.
- Heat the oil in a pan and roast the vegetables while constantly stirring.
- Add thyme, rosemary and garlic, stir-fry for another 2 minutes and leave to cool.
- Chop chives very finely and roll in pieces of cheese to about the size of a walnut.
- Place the vegetables on the bread and put the chive/cheese corners on top.
Tip: Put the corners on slices of pumpernickel with a salad leaf – great for parties. Also delicious with cream cheese with chives flavour!
